LAS VEGAS – March 29, 2010 – The Rampart Casino will celebrate Easter Sunday with Special Menus on Sunday, April 4 at the Carmel Room, Promenade Café and Rampart Buffet.

Easter Sunday Menus

Carmel Room will offer an Easter Tea & Brunch from 10:30 a.m. to 2:30 p.m. for $32 per person.

The menu options will include Numi Organic Tea and Teasan or freshly brewed coffee, a Pastry Basket featuring a basket of warm pastry, muffins, cinnamon rolls and sticky pecan rolls, Fruit Compote featuring fresh assorted melon balls and fresh berries with Chambord syrup. The brunch entrées will include a choice of Crab & Asparagus Omelet featuring Maryland lump crab meat and asparagus with fluffy eggs and mornay sauce, Quiche Forestiere featuring a savory custard made of fresh cream, eggs, mushrooms, cheese and green onions in a flaky crust, Crusted Cinnamon Swirled French Toast featuring cinnamon swirl egg bread coated with crushed frosted flakes and pecan with Vermont maple syrup, Fettuccini Alfredo with Grilled Chicken featuring broiled breast of chicken around a nest of fettuccini with creamy alfredo sauce and fresh broccoli, Lamb Chops Carmel featuring petit lamb chops marinated in olive oil, garlic and shallots, broiled medium rare with bordelaise sauce, sour cream and horseradish potato pancakes, Petite Steak and Lobster Cake featuring grilled petite filet mignon with pan fried Maine lobster cake and sauce amoricaine. Promenade Café
will offer their special Easter Sunday Menu from 11 a.m. to 9 p.m.

There will be a choice of three entrées: Traditional Roasted Ham with apricot glaze, creamy au gratin potatoes, baby carrots and sugar snap peas for $9.99 or Roasted Leg of Lamb with rosemary roasted pee wee potatoes, carrots, sugar snap peas and mint bordelaise sauce for $12.99 or Smoked Salmon featuring lightly cured and smoked salmon with crispy potato pancakes, asparagus and dill hollandaise for $11.99. Each entrée will come with a choice of either Spinach Salad featuring baby spinach with shaved red onion, mandarin orange, walnuts and raspberry vinaigrette or Cream of Asparagus Soup. Dessert will be a choice of Caramel Peach Pie with fresh whipped cream or Chocolate Raspberry Mousse parfait for $3.99.

Rampart Buffet will be having a special Easter Brunch from 9:30 a.m. to 9:30 p.m. for $15.99 per person.

Easter Brunch Specialties will be served from 9:30 a.m. to 3:00 p.m. and include items such as scrambled eggs, eggs Benedict, lox sunrise scrambled eggs, hickory smoked bacon, sausage links, corned beef hash, Belgium waffles, cinnamon swirl French toast, blueberry pancakes, apple crispitos, hot cinnamon rolls, boysenberry syrup, blueberry topping, strawberry topping, maple syrup and omelets cooked to order.

The menu will also feature Easter Specialties such as shrimp scampi, halibut in herb butter, herb crusted game hen, pork loin with apple stuffing, chicken saltimbocca, broiled N.Y. steak with mushrooms, redskin garlic mashed potatoes, oven roasted garlic asparagus, broiled steak piccata, steamed clams in garlic basil butter, broiled chicken & tortellini with sundried tomato vodka sauce, steamed broccoli, and sautéed spinach. An array of desserts will also be served including: fruit cobbler, baklava, cinnamon buns, colorful Easter eggs, candies & rugelach and a chocolate fountain.
