featuring passed appetizers and a four-course dinner paired with ultra-premium tequila brand Clase Azul
From 7 - 9 PM on Aug. 1, guests will dine at Border Grill's iconic restaurant inside Mandalay Bay overlooking the outdoor pool while tasting multiple varities of Clase Azul - widely known as one of the most respected and exclusive tequila brands in existence. Made 100% from organic Tequilana Weber Blue Agaves, Clase Azul treats its tequila with care from start to finish. For the four-course dinner, expect each course to be a Mexican masterpiece: Lobster and Chorizo with black bean mole and purslane; Butter Poached Black Cod including roasted zucchini, passmore ranch caviar and charred squash puree; Wagyu Short Rib braised in a mushroom thyme infusion and black summer truffle coupled with cauliflower puree and chanterelle mushrooms; and for dessert indulge in Frog Hollow Farm Apricot Sorbet Ceviche with fresh apricot and lime air.
The four courses will be paired with four unique varieties of Clase Azul including Blanco, Reposado, Añejo and Ultra (respectively).
