Chef André Rochat Showcases Holiday Food with French Flair
LAS VEGAS (Aug. 2010) – Why not put the pots and pans away this holiday season and savor the opportunity to experience a Thanksgiving feast with a delicious French twist? This Thanksgiving, Chef André Rochat of the Michelin-awarded Alizé at the Top of the Palms marks the traditional American holiday with menu selections best described as a true French harvest celebration.
The special Thanksgiving menu features an amuse of toasted hazelnut panna cotta with candied quince followed by a savory roasted chestnut and foie gras soup. Enjoy seared diver scallops with Kubocha squash purée in an almond-browned butter sauce. Highlighting fresh ingredients, the meal continues with baby red and green Romaine salad with herbed goat cheese and aged balsamic vinaigrette.
To refresh the palette, enjoy an orange cranberry sorbet prior to a main course featuring a choice of Andre’s traditional oven roasted free-range turkey with herb-nut and dried fruit stuffing, giblet gravy, truffled potato mousseline, roasted sweet potatoes, sweet baby carrots and cranberry relish or pan seared California sea bass with black truffle and celery root risotto, spicy walnuts and Port Wine reduction or roasted Kurobuta pork chop with sauteed spinach, smoked polenta, apricot and orange confiture, cumin jus. Vegetarian options are also available.
Top the meal with one of four delicious dessert choices including a sweet and satisfying, traditional take on pecan pie with rum raisin ice cream and creme fraiche or pumpkin pie with cinnamon chantilly and vanilla cream sauce. For those needing a bit more decadence choose a warm cherry and chocolate cobbler with brown sugar ice cream or apple tarte tatin with creme anglaise and Calvados ice cream.
